2 small/mediumish sweet potatos - cut into bite size cubes, toss with a small splash of good extra virgin olive oil (EVOO) & a healthy sprinkling of cumin and allspice till evenly coated, spread on a baking tray, roast at about 180 degrees celcius for approx 20 minutes or until tender but firm. Allow to cool.
1 can of chickpeas, drained and rinsed.
1 small red onion, finely sliced.
2 small smoked chicken breasts
Small bunch of coriander, roughly chopped
half a (prepacked) bag of baby spinach, or a few good handfuls of the free range stuff

Juice of one lemon
Equal amount of EVOO

Mix the first lot in a bowl, put the juice and EVOO in a jar and shake the hell out of it till it emulsifies and use as a dressing to taste.

Enough for two big dinners, and two good lunches.
